TASTING NOTES AND PAIRINGS

The Cabernet IGT Veneto is obtained from 100% organic Cabernet Sauvignon grapes, certified by Valoritalia and Vegan Society.

It shows a ruby red color. On the nose, it is vinous, intense, and characteristic, with hints of black cherries.

On the palate, it is balanced, recalling cherry jam and green pepper, with good balance and pleasant persistence.

Excellent pairings at the table include spicy dishes, vegetable couscous, baked pasta, tomato-based first courses, and vegan cuisine.

Alcohol content: 12.5% vol.

Optimal serving temperature: 16-18°C.

AROMA VINOUS AND INTENSE, WITH HINTS OF BLACK CHERRIES.
TASTE DRY AND VELVETY, SAVORY AND FRUITY, WITH A LIGHT BITTER ALMOND AFTERTASTE, FULL-BODIED, HARMONIOUS, WITH GOOD ACIDITY AND ALCOHOL.

VINIFICATION AND AGING

WINE PRODUCED FROM SELECTED AND HEALTHY GRAPES, WITH IMMEDIATE SEPARATION OF THE SOLID PART, OXYGENATION AND TEMPERATURE REDUCTION, STATIC CLARIFICATION OF THE MUST AND MACERATION FOR 6-8 DAYS IN STAINLESS STEEL TANKS. AFTER ALCOHOLIC FERMENTATION, THE WINE IS RACKED INTO STAINLESS STEEL VATS, WHERE IT COMPLETES MALOLACTIC FERMENTATION (AFTER AN INITIAL DECANTING PHASE). IT IS THEN FILTERED AND RACKED AGAIN BEFORE BEING BOTTLED AND RELEASED FOR SALE.
