AMARONE D.O.C.G. DELLA VALPOLICELLA

TASTING NOTES AND PAIRINGS

Amarone D.O.C.G. della Valpolicella is a wine of great structure and alcohol content, obtained from Corvina, Corvinone, and Rondinella grapes.

On the nose, it is alcoholic: first marasca cherry, then plum, cherries in spirit, and toasted almond. Final notes of coffee, tobacco, and cocoa.

On the palate, it is powerful, warm, broad, and enveloping, with a light tannic sensation. Persistent and long, it leaves a pleasant, clean finish and stimulates salivation.

ORIGIN AND GRAPE VARIETY

Produced in Valpolicella, near Verona, from Corvina (45-95%) and Corvinone (up to 50% as a substitute for Corvina), with Rondinella (5-30%) and small percentages of Oseleta and Molinara.
Only the best, perfectly healthy and ripe grapes are dried in drying lofts for 3-4 months, losing at least half of their initial weight and reaching a sugar concentration between 25% and 30%.

VINIFICATION AND AGING

THE GRAPES ARE PLACED IN VINIFICATION TANKS IN JANUARY-FEBRUARY TO CONTROL FERMENTATION TEMPERATURE. MOVEMENT OF THE MARC FAVORS EXTRACTION OF COLOR AND TANNINS. AFTER FERMENTATION, THE WINE COMPLETES MATURATION IN SLAVONIAN OAK CASKS AND FRENCH OAK BARRIQUES. THIS IS FOLLOWED BY BLENDING, BOTTLING, AND FURTHER MATURATION BEFORE RELEASE. OPTIMAL STORAGE IN DARK, DRY PLACES AT 10-14°C. AGING POTENTIAL: 4-8 YEARS.
