TASTING NOTES AND PAIRINGS

Le Argille Cabernet I.G.T. Veneto is a red wine obtained from a masterful blend of 50% Cabernet Sauvignon and 50% Cabernet Franc, grown in the Treviso countryside, along the Sile River.

On the eye, it appears intense red, with elegant garnet reflections.

On the nose, it is warm, complex, and enveloping; aromas of very ripe small berries emerge, with notes of blueberry, blackberry, and wild strawberry. These are followed by hints of plum jam, sour cherries in spirit, and vanilla, with delicate final nuances of tobacco, dark chocolate, and green pepper.

On the palate, the entry is broad and assertive. The long maturation in concrete vats contributes to a soft and rounded profile, with returns of ripe red fruits and a pleasantly tannic, persistent finish that leaves a clean, dry sensation.

Ideal as a meditation wine, it pairs well with aged or blue cheeses and game dishes. It is also appreciated with jam tarts and shortcrust pastries. Surprisingly, it pairs well with dark chocolate and licorice.

TASTE MATURE, ELEGANT, SOFT, AND ROUNDED, WITH A PERSISTENT TANNIC AND DRY FINISH.

ORIGIN AND GRAPE VARIETY

It comes from a blend of Cabernet Sauvignon and Cabernet Franc grown in vineyards in the Treviso countryside, along the Sile River. The Double Reasoned Maturation technique allows grapes to reach greater sugar concentration and structure while maintaining balance and elegance.

VINIFICATION AND AGING

GRAPES ARE FERMENTED AS RED WINE WITH MACERATION FOR 15-20 DAYS AND TARGETED PUNCH-DOWNS. PART OF THE BUNCHES IS SUBJECTED TO VINE CUTTING ACCORDING TO THE DMR TECHNIQUE, WHICH STANDS FOR “DOUBLE REASONED MATURATION”: THE SHOOT IS CUT, ALLOWING FOR NATURAL DRYING ON THE VINE BEFORE HARVEST.

THE WINE MATURES FOR TWO YEARS IN CONCRETE VATS TO PRESERVE AROMATIC PURITY, AND THEN UNDERGOES A SHORT PERIOD OF AGING IN WOOD. THIS IS FOLLOWED BY BLENDING, SENSORY ANALYSIS, AND BOTTLE MATURATION FOR AT LEAST SIX MONTHS BEFORE RELEASE. RECOMMENDED STORAGE IN A CELLAR AT 10-14°C. AGING POTENTIAL: 5-10 YEARS.
