AFTER CAREFUL HARVESTING, THE ORGANIC VEGAN GLERA GRAPES ENTER THE WINERY WHERE THEY ARE CRUSHED. THE FIRST FERMENTATION TAKES PLACE IN THE MUST, FOLLOWED BY RACKING TO CLARIFY THE WINE THAT WILL BECOME SPARKLING. THE NECESSARY SUGARS ARE THEN ADDED TO THE BASE WINE FOR THE SECOND FERMENTATION.
THE SECOND FERMENTATION TAKES PLACE IN AUTOCLAVES. THE WINE IS THEN FILTERED AND RACKED BEFORE BOTTLING AND RELEASE FOR SALE.
