TASTING NOTES AND PAIRINGS

The Primitivo di Manduria D.O.C. shows an intense and deep red color, tending towards garnet with aging.

On the nose, it is clean and warm, with a strong perception of blackcurrant jam and plum, followed by intriguing spicy notes of pepper and vanilla.

On the palate, it offers an excellent entry, followed by a pleasantly warm sensation. The structure is rich and well-balanced, combining acidity, sapidity and light tannins, with a long and satisfying persistence.

It pairs perfectly with lamb, aged cheeses and roasted meats.

Alcohol content: 15% vol.

Serving temperature: 18–20°C.

COLOR: INTENSE, DEEP RED, TENDING TOWARDS GARNET WITH AGING.
AROMA:  CLEAN, WARM, WITH NOTES OF BLACKCURRANT JAM AND PLUM, FOLLOWED BY PEPPER AND VANILLA.
TASTE: EXCELLENT ENTRY, WARM AND SLIGHTLY SPICY, WELL-BALANCED BETWEEN ACIDITY, SALINITY AND LIGHT TANNINS, WITH LONG PERSISTENCE.

Grape variety: 100% Primitivo. Origin: selected areas in the provinces of Taranto and Brindisi

VINIFICATION AND AGING

TRADITIONAL VINIFICATION WITH DAILY PUMP-OVERS DURING THE FIRST WEEK AND EVERY TWO DAYS DURING THE SECOND WEEK OF FERMENTATION. FERMENTATION TEMPERATURE IS CONTROLLED BETWEEN 24°C AND 28°C.
AFTER ALCOHOLIC FERMENTATION, THE WINE UNDERGOES RACKING AND SOFT PRESSING OF THE SKINS, FOLLOWED BY MALOLACTIC FERMENTATION. BEFORE AGING, 2 TO 3 RACKINGS ARE CARRIED OUT.
AGING TAKES PLACE IN WOOD, USING TWO TYPES OF CONTAINERS: 500-LITER BARRELS AND 6,000-LITER LARGE CASKS.
AFTER AGING, THE WINE IS ANALYZED AND TASTED BY THE CHAMBER OF COMMERCE OF TARANTO. ONCE APPROVED, IT IS BOTTLED AND RELEASED TO THE MARKET.
STORE IN A COOL, DRY PLACE. AGING POTENTIAL CAN EXCEED 5–6 YEARS.
