TASTING NOTES AND PAIRINGS

The Chardonnay D.O.C. Venezia “Sottovoce Collection” is a balanced and rich wine in every respect: its clean, straightforward character is accompanied by notes of ripe fruit that give way to hints of toasted hazelnut, vanilla, and honey. 

On the eye, it appears bright and lively, with pleasant golden-yellow hues, typical of a white wine matured in wood.

On the nose, the impact is elegant and complex: initially, ripe fruit notes prevail, followed by hints of toasted hazelnut, vanilla, and honey.

On the palate, an excellent initial acidity is perceived. It is long, deep, savory, and persistent, with a refined linearity in the mouth.

It pairs well with stewed fish and fresh cheeses made from sheep’s milk or, if cow’s milk, moderately aged cheeses.

Alcohol content: 13% vol.

Serving temperature: 10-14°C.

ORIGIN AND GRAPE VARIETY

100% Chardonnay grape variety, a white grape originating from the wine-growing region of Burgundy in France. Highly adaptable to the territory where it is cultivated, from which it draws the elements needed to express different characteristics depending on the area.

VINIFICATION AND AGING

THE GRAPES ARE DESTEMMED AND CRUSHED, THEN TRANSFERRED INTO A PNEUMATIC PRESS WITH SKIN CONTACT FOR 4-8 HOURS, FOLLOWED BY THE PRESSING CYCLE.

THE MUST IS COOLED AND LEFT TO SETTLE. AT THE END OF ALCOHOLIC FERMENTATION, THE TEMPERATURE IS LOWERED TO 8-10°C. IN JANUARY, 2/3 OF THE WINE IS TRANSFERRED INTO SMALL WOODEN CASKS FOR 6 MONTHS. IT IS THEN BLENDED WITH THE PORTION MATURED IN STEEL. THE WINE RESTS FOR 3-4 MONTHS BEFORE BOTTLING AND A FURTHER 3 MONTHS IN BOTTLE BEFORE RELEASE.
