TASTING NOTES AND PAIRINGS

Grillo Sicilia DOC “Intrigo” is a white wine that clearly expresses the character of the grape variety and the Sicilian territory.

On the nose, it opens with intense aromas and fruity and spicy notes that evoke ripening in the Mediterranean sun.

On the palate, it is fresh and structured, with good sapidity and persistence.

It pairs well with fish starters, both cooked and raw. Excellent with sarde a beccafico and baked fish, especially grouper.

Alcohol content: 12.5% vol.
Serving temperature: 12-14°C.

COLOR BRIGHT, DEEP YELLOW WITH ELEGANT AND VIVID GOLDEN HIGHLIGHTS.
AROMA INTENSE, CLEAN, AND ELEGANT, WITH NUANCES OF RIPE FRUIT AND CAPTIVATING MEDITERRANEAN SPICE NOTES.
TASTE FRESH, DRY, AND FULL-BODIED, WITH EXCELLENT BALANCE BETWEEN ACIDITY AND SOFTNESS, GOOD PERSISTENCE, AND A PLEASANT FINISH.

ORIGIN AND GRAPE VARIETY

Produced with a minimum of 85% Grillo grapes; up to 15% other white grape varieties authorized for cultivation in the designated areas of the Sicilian region may be included. A versatile wine in pairings, capturing the light and warmth of the sun that illuminates the land from which it comes.

VINIFICATION AND AGING

THE GRAPES ARE HARVESTED IN THE FIRST HALF OF SEPTEMBER AND SUBJECTED TO MACERATION AND GENTLE CRUSHING TO OBTAIN A CLEAN AND PROPERLY COLORED MUST, THEN AERATED AND CLARIFIED. ONCE CLEAR AND COOLED, SELECTED YEASTS ARE ADDED TO START ALCOHOLIC FERMENTATION.

AFTER FERMENTATION, WHICH LASTS 10-12 DAYS, THE FIRST RACKING IS CARRIED OUT. THE WINE IS THEN STORED AT CONTROLLED TEMPERATURE UNTIL BOTTLING.
